The reason I like this recipe is that it's very easy to make ahead of time, so you can enjoy time with family and friends instead of preparing and cooking. You can also double up the recipe and it goes a long way!

Ingredients
  • 2 pounds lean beef cubed
  • 2 tablespoons oil
  • 1 to 3 tablespoons flour
  • ¼ teaspoon thyme
  • 1 can (10½ ounces) beef broth consommé soup
  • 10½ ounces Burgundy wine
  • 1 (8 ounce) package fresh mushrooms, sliced
    or
    1 (4 ounce) can, drained
  • 1 small jar boiled onions, drained

Directions:

  • In a large pot, brown beef in oil. Add thyme and flour, stirring to coat beef and collect drippings.
  • Put beef in casserole dish, add mushrooms and onions.
  • Mix together consommé and wine (use the empty consommé can to measure the wine, so both are equal parts), stir into beef.
  • Cover and bake at 325 degrees for 2 hours.
  • Serve over noodles or rice.
