We would help my mom make all kinds of cookies and loaves ahead of time, and there was always a variety of date-inspired dishes. Dates filled with peanut butter, rolled in sanding sugar, date nut loaves with cream cheese on Christmas morning, and my favorite of all: these coconut date balls. Even now, making them brings back the excitement and anticipation that I still have in getting ready for the holidays.

Ingredients
  • 8 tablespoons (1 stick) unsalted butter
  • 1 package (8 ounces) dates, pitted and cut into small pieces
  • 1 cup brown sugar
  • 1 egg, beaten
  • 1 teaspoon vanilla
  • 2 cups Rice Krispies
  • ½ cup walnuts or pecans, chopped finely
  • sweetened shredded coconut

Coconut Date Balls

Directions:

  • In a large saucepan, combine the butter, dates, and brown sugar.
  • Put on low heat, and just when the butter melts, add the egg. Cook about 10 minutes, stirring occasionally.
  • Remove mixture from heat and allow to cool slightly, for about 10 minutes.
  • Add the Rice Krispies, nuts, and vanilla.
  • Form into 1-inch balls, then while still warm, roll balls in the shredded coconut.

Makes about 40 1-inch balls
