Ingredients
- 8 tablespoons (1 stick) unsalted butter
- 1 package (8 ounces) dates, pitted and cut into small pieces
- 1 cup brown sugar
- 1 egg, beaten
- 1 teaspoon vanilla
- 2 cups Rice Krispies
- ½ cup walnuts or pecans, chopped finely
- sweetened shredded coconut
Coconut Date Balls
Directions:
- In a large saucepan, combine the butter, dates, and brown sugar.
- Put on low heat, and just when the butter melts, add the egg. Cook about 10 minutes, stirring occasionally.
- Remove mixture from heat and allow to cool slightly, for about 10 minutes.
- Add the Rice Krispies, nuts, and vanilla.
- Form into 1-inch balls, then while still warm, roll balls in the shredded coconut.
Makes about 40 1-inch balls
