to Yours

One of the strongest memories of my childhood is making Irish bread with my grandmother, in her kitchen in New Jersey. We mixed the ingredients together, forming dough into a large mound with our hands. She would always say, “Excuse my hands, I can't put my feet to it!” While the bread was still warm, we would eat it, slathered with butter and washed down with a cup of “billy goat tea” (mostly milk and a splash of tea) on TV tables, while watching All My Children.

Ingredients
  • 3 cups flour
  • 3½ teaspoons baking powder
  • ¾ cup sugar
  • ¾ teaspoon salt
  • 1 cup raisins
  • 1½ cups milk plus more for brushing
  • 1 egg
  • 2 tablespoons melted shortening

Directions:

  • Sift flour, baking powder, sugar, and salt into a bowl.
  • Add raisins and blend in.
  • Add milk and egg and mix well.
  • Add melted shortening and mix.
  • Grease and flour a 9-inch cake pan (I use my cast iron pan). If there is too much batter, use an extra smaller pan or cupcake pan for the extra.
  • Brush the surface with milk to brown.
  • Bake at 350 degrees for 35 minutes or until a toothpick inserted comes out clean.

Serves 8–10
